Our dark milk chocolate bar is a blend of our cacao beans that have typical "chocolate" flavors and are complimented by the addition of milk. 45% is a "high" cacao - or "dark milk" chocolate. USDA guidelines for milk chocolate set the range of chocolate liquor (also known as cocoa mass, cacao mass and several other names - including just "chocolate" - but it's the liquid you get from griding roasted cacao beans) minimum of 10% (only 10%!). To be marketed as milk chocolate, a product must contain at least 10 percent chocolate liquor, at least 3.39 percent milkfat, and at least 12 percent milk solids.
We prefer the higher cacao percentage in the Milk Chocolate Bar as it intensifies the chocolate flavor, and the milk provides a creamy, rich, silky texture. The cacao nibs are added to give a contrast of flavor and texture to the bar.
