Chocolate enthusiasts of Rochester rejoice.  A small batch bean-to-bar chocolate manufacturer opens their virtual doors today for business selling hand-crafted chocolate bars. For those unfamiliar with the term “bean-to-bar”, it refers to the process of taking dried and fermented cacao beans, roasting them to perfection and then grinding them for hours (sometimes days) along with organic sugar and cocoa butter into artisan chocolate.  Cacao beans are a fruit and like grapes in wine they offer unique flavors based on origin they are grown in.  Each bean has a unique flavor profile that comes through in each chocolate bar.

“A” in A. Craft is short for Antinore's Craft Chocolates.  Owner and chocolate maker, John Antinore, is a 2002 Culinary Institute of America at Hyde Park grad and has been working as a Pastry Chef locally for the last 18 years. In his career he’s traveled as far as Switzerland and all over the US chasing his interest in chocolate and visiting many other chocolate producers.  His plan is to start with 5 of his favorite origins of beans and offer large and mini bars of those origins.  Future plans include collaborations with local breweries, wineries and businesses on custom blends and bars unique to them. Interested in your very own batch or blend?  Batches range from 55-65 bars!  Custom wedding, baby/bridal shower and birthday party favors available.
