John J. Antinore Jr. is a chocolate maker, chocolatier and pastry chef with 25 years of experience. To further his experience, John attended the Culinary Institute of America at Hyde Park, NY and holds a degree in Baking & Pastry. Since graduating in 2002, John has worked as a corporate pastry chef developing chocolates and desserts for the last 18 years.
Chocolate is his passion. Always curious, he's traveled as far as Switzerland, and all throughout the United States, to learn more. In the last several years his interest has grown to include the source of the beans used to make chocolate. How different beans available from around the world influence the subtle flavor differences. Like wine, the variety of bean and the terroir play major roles in the flavor. His travels have included visits to many other bean-to-bar chocolate makers, some grass roots small manufacturers, others more established with big names. With each visit his inspiration to jet out on his own venture grew.
In March of 2020, the shop was completed, A. Craft Chocolate was created and his first batch of cacao beans were roasted.
The rest, as we say, is history.
